Bartender, owner and consultant, Robin does it all thanks to a passion for the industry and an addiction to COFFEE. But his favourite place will always be behind the bar where he likes to craft cocktails and the spirits themselves, showcasing endless creativity and care.

I’m too old to remember that.
What spirit do you most enjoy working with?
Coffee.
What is the one piece of advice you would give to a young bartender?
“Do or do not, there is no try.”

What do you do to ensure that you have a good life-work balance?
Yoga. Coffee. Rock climbing. More coffee.
What’s your all-time favourite cocktail?
Campari Daiquiri.
Where do you find inspiration when creating cocktails?
“Some people can read War and Peace and come away thinking it’s a simple adventure story. Others can read the ingredients on a chewing gum wrapper and unlock the secrets of the universe.”

If you could change anything in the hospitality industry, what would it be?
Come to my seminar.
What do you most admire about the bartending profession?
It’s a glamoured, entry-level industry slowly being swallowed by the poverty line. The hospitality industry may be the closest thing to a societal canary.
What three trends do you see shaping the cocktail world over the next year?
Trends are things we make fun of two years from now.
