Sushi combo platters are the fastest-growing item at emerging chain restaurants, highlighting larger foodservice trends of global foods, value bundles and indulgent options proliferating on menus. These combos often feature several types of rolls or sides such as miso soup or salad.
Several add-ons and toppings are increasing on emerging chain menus, allowing for guests to customize offerings to their liking and potentially boosting cheques for operators. Showing growth are extra/double-protein toppings (often in the form of an extra burger patty), salad add-ons (most typically as a substitute side option) and saucy/gravy toppings. These all reflect trends of personalization and customization proliferating on menus, as well as indulgence, allowing consumers to double up on proteins or add additional sauces to items.
