As Canada celebrates its 150th birthday, Terroir Symposium marks its gastronomic coming of age by honouring the culinary mosaic that resides on all three coasts. In this country of mountains, prairies, oceans, lakes and rivers, this year’s Terroir Symposium is delving into First Nations food traditions—inherently respectful of the natural world—and how they inform mainstream Canadian farming, fishing, foraging and dining today.

The conversations will be zoning in on immigration, historical trading ties, and political clashes that have shaped and expanded Canada’s foodscapes and palates. Come explore regional idiosyncrasies, indigenous ingredients, and scientific breakthroughs from the past, in the present, and the next 150 years to come.

Terroir takes place May 29th 2017 at Toronto’s Art Gallery of Ontario, 317 Dundas Street West.
